Cherry Clafouti

Okay, I have a confession to make. It's actually been over two weeks since I made this dish. The combination of being both busy and lazy means that I've kept putting off my blog update. My sincerest apologies, audience (all, what, 12 of you?). Anywho, here is a delicious French dessert and / or brunch item. It comes from Julia Child's classic Mastering the Art of French Cooking.

Cherry Clafouti

Ingredients:
3 cups pitted cherries (fresh will be best for this)
1 and 1/4 cups milk
2/3 cups regular sugar
3 eggs
1 tablespoon vanilla extract
1/8 teaspoon salt
1/2 cup flour
1/4 cup powdered sugar


Note: this recipe is for one clafouti. I doubled it and made two.

Serves: 6 - 8 (Calories: 224, if divided into 8 servings); Prep time: around 30 (pitting cherries takes a while); Cooking time: 65 minutes

Directions:
1. Preheat oven to 350 degrees.

2. Put the milk, eggs, vanilla extract, salt, flour, and half of the regular sugar (1/3 cup) in mixing bowl and blend until smooth.



For future reference, this is your basic recipe for crêpe batter. You know, should you ever want to make crêpes.

3. Pour a 1/4-inch layer of batter in a round, lightly greased baking dish.


4. This is where I strayed from Julia, per my grandma's recommendation. Julia says to put the baking dish on a stove burner to set. I put it in the oven for 5 minutes instead. The batter doesn't have to be completely firm, just set on the bottom.


5. Spread the cherries on top and sprinkle with the other half of the regular sugar.



6. Pour the rest of the batter evenly over the cherries.


7. Bake for one hour. As Julia says, "the clafouti is done when it has puffed and browned." Also, you should be able to stick a knife in and have it come out clean.


8. Put the powdered sugar in a little strainer and shift over the clafouti.



9. Cut into 6 or 8 pieces and stuff into your face.
